To maintain our standards, we only purchase Canadian Angus beef that is graded AAA Prime, dry aged 21 days.
We currently use two suppliers for Angus beef; we buy sides of beef from a Mennonite operated abattoir near Stirling and we buy primal cuts from an abattoir in Peterborough County. Both suppliers cut and vacpack to our specs and we can order special cuts for you from them.
We also found a supplier for a custom beef grind using a proprietary blend of ground Angus brisket and ground Angus Chuck. So our new feature burger is going to be the “Brischuck™ Burger”.
Both brisket and chuck are renowned as being the most flavourful cuts of beef. The combination of the two in a single patty gives us the ultimate beef burger, only at Houston’s.
